I've stayed twice at a farm owned by a Brit, Cliff Surtees. There's a self catering house, a smaller self catering cottage, a couple of motel type barn conversion rooms, a hostel with dorm beds and an area for camping. It's in a lovely setting on the banks of the Yantra river with frog chorus, storks, kingfishers etc. It's close enough to VT for the bus and taxi fares to be cheap. Cliff goes out of his way to be helpful and is the perfect host.

It's a very nice area, as you say and Trinity Rocks Farm seems very pleasant from what you say and the website. I almost settled in that area (Gabrovo) when I moved to BG in 2004. It was a toss-up between Gabrovo and Balchik.

Looks very nice buy I haven't been there and you can really get a good feel for a place until you see it in the flesh
