Simple Eggplant - Tomato Sauce (Saltsa Me Melitzana)
Ingredients
4 tablespoons butter
2 teaspoons chopped garlic
½ cup chopped onions
2 cups skinned, chopped eggplant
1 cup tomato sauce
½ teaspoon dried oregano
¼ teaspoon salt
1 teaspoon sugar
½ cup water
Method
1. Melt butter in a medium-size saucepan.
2. Saute garlic, onions, and eggplant for 5 minutes, or until tender.
3. Add tomato sauce, oregano, salt, sugar, and water.
4. Simmer, uncovered, for 20 minutes, stirring frequently.
5. Add more water if sauce is too thick.
