During normal driving on a warm day, the needle should stay around the halfway mark...using the aircon under those conditions should only make it move up just a fraction.
Things to check...
Radiator cap is sealing properly,
Fan belts are intact and correctly tensioned,
The big fan is turning when the engine is running,
The aircon matrix, intercooler and radiator fins are not clogged with dirt and dust. All of those things sit behind the grill and can easily get fouled...a good air nozzle will clean it all out...make sure to direct the air from the engine side of the radiator, not the other way around.
Because the aircon gets its cooling air first, there will be little correlation with the loss of coolant, but if the intercooler and/or radiator fins are blocked, engine cooling is not happening properly.
