| Hi Guys As many people are inundated with tomatoes. peppers, cues and sweetcorn etc thought it might be a good idea if we had some idea what t do with them, e have these items coming out our ears and I for one have no idea what to do with them. There are a few on here like Chris's cold tomato soup and Mrs Eq's sweet tomato chutney . I will copy on to this pos to start us off, but please add your recipy accordingly. |

| Re: tomatoes Postby Chris » 24 Jul 2013 13:26 Even in the height of summer I make cold tomato soup to eat, to use up the glut of tomatoes on offer. Something like a chilled Gazpacho is perfect on summer days and gives a fantastic taste. Here's my version...Ingredients: 3lb tomatoes peeled and roughly chopped* 2 cucumbers peeled and roughly chopped* 1 red onion roughly chopped 4-6 cloves of garlic finely chopped 2 green peppers 2 slices bread 2 tablespoons red wine vinegar 4 tablespoons virgin olive oil * take the seeds out if you can be bothered Method: Bring a pan of boiling water to the boil. Switch off. Throw tomatoes in for a minute then remove. This makes it easier to skin them. Soak the bread in a few spoons of water and squeeze to remove excess. Throw tomatoes, cucumber, onion, garlic, pepper and bread into a blender and blend until smooth (you may have to do this in 'batches' as it's a lot of ingredients). Once blended pour into a bowl, stir in vinegar and oil and shove in fridge for two hours. |

Postby Equinus » 25 Jul 2013 02:39 The recipe for sweet tomato chutney calls for 6 lb each of skinned tomatoes, onions and apple, all chopped fairly fine, 1.5 pints of vinegar and 4 lb sugar. Boiled till thick, Simple. If you took that amount of onion out it would be totally different, even if you used double tomatoes. It would alter taste and texture.
Mum's hot tomato chutney has no onion, but is more complicated as it also makes a sauce. I have altered it to use fresh garlic and ginger, and some chilli flakes in place of some of the powder, also used some of the apricots I dried instead of raisins, but this is the original recipe.
7 lb skinned and chopped tomatoes 1.5 pints vinegar 2 lb raisins 4oz dried garlic powder or granules 4oz powdered ginger 1oz hot chilli powder 2 lb sugar.
Boil it all up till thick ish, about an hour. Strain any liquid off and bottle the pulp. The liquid you have strained off goes back on the heat, with half a cup of vinegar and quarter cup of sugar per pint of liquid, boiled for five minutes, or longer if you want it thicker, makes a good dipping sauce. You could add more chilli at this stage if you like a really hot sauce, but taste it first. Leave for a couple of months before using or it tastes a bit 'raw'. |

| Pulneni Chushki (Stuffed Peppers) 4 green or red peppers 1/2 lb ground lamb 1 cup cooked white rice 2 tablespoons oil 1 tomato, peeled and minced ½ cup feta cheese, crumbled 1 small onion, minced 1 tablespoon paprika 1 clove of garlic, minced 2 tablespoons Italian parsley, finely minced pinch of oregano, cumin, and black pepper 1 egg, beaten Preheat oven to 350 degrees F (175 degrees C). Sweat the onion in a skillet for about 5 minutes. As the onions turn translucent, add the lamb and break it up with a spatula or spoon. Cook completely, adding the seasonings including salt. Remove the tops (save them for later), seeds, and membranes of the bell peppers. Rub each of the peppers with olive oil. Use your hands. It will feel good. Season the inside of each pepper with salt and pepper. Arrange peppers in a baking dish with the hollowed sides facing upward. (Slice the bottoms of the peppers if necessary so that they will stand upright.) In a bowl, mix the browned lamb and onion mixture, cooked rice, feta cheese, egg and the spices/seasonings. Spoon an equal amount of the mixture into each hollowed pepper. Return the lid of the pepper to each pepper and Bake 35 to 45 minutes in the preheated oven or until it starts to char on the outside of the peppers. |

| we definately covered the tomatoe recipes on a previous post but other recipes are usfull now that the figs and the peaches are dropping from the trees huge and juicy They all make wonderful jam compot as it is called here in BG equal weight fruit to sugar boil and jar. The peaches are good put into a jar light sugar water or just water added put the lids on the jars turn upside down submerge in pan of hot water and boil for 45 mins lovely to eat any time of the year |

| Just pigged out on a huge bowl of last years peach compote and Nestle vanilla icescream..don't care if you laugh..it was yummy!! |
