| Not for the faint hearted. Sheep's Head Soup/Broth.Ingredients1 Sheep's-head 6 PINTS WATER,11/2LBS CARROT,TURNIP,ONION OR LEEK, CELERY, MIXED, 1/4 LB BARLEY, 1 TEASPOON CHOPPED PARSLEY, 6 PEPPER CORMS SALT AND PEPPER. MethodSPLIT THE SKULL LENGTH WAYS AND REMOVE THE BRAINS CAREFULLY; PLACE THEM IN COLD SALTED WATER. Chop off the nose and clean the head well all over with salt. Remove the tongue. Tie the head together and place in a saucepan with the tongue. Cover with hot water, add 2 teaspoonfuls of salt,and ,as the water boils, skim well. Cook for 1 hour. Wash the brains, tie in muslin and cook in the broth for 20 minutes. Cut the vegetables in small pieces,add these to the broth. Simmer for 2 hours , Season, add the parsley and the meat from the head cut into small pieces. The head can be served separately with a sauce made from the brain. | I yes I dare eat this dish, this will show my age now my grandparents bought me up and we used to have this for dinner, the brains I used to have on toast, they taste similar to soft roes. We used to have pigs trotters as well, all these were good for you, when the head was cooked my grandmother used to put it on the table in a large pan and then dish it out with mashed potatoes and veg. This brings back all the memories of the good old days. |

| I've often seen the heads in the supermarkets around this time of year and wondered what they did with them? is this some sort of traditional thing? |

| I'm not sure about the tradition but here is another for anyone who has the guts for it Lamb heads soup (Супа от агнешки глави)Ingredients: 2 lamb heads 1 onion 150 gr. spinach 50 ml olive oil 1 tbsp. flour 1 tsp. red pepper 50 ml yoghurt 1 egg Pepper Salt Preparation and serving: Cook the heads in water with salt until they soften. Remove the meat, brain and tongue from the bones. Cut everything in pieces and add back to the boiling bouillon. Chop fine the onion and stew it in a bit of water, oil, flour and red pepper. Add the fine chopped spinach and the pepper. Cook for another 15 min. Bind with the egg and the yoghurt. Serve hot. |

| I actually had this at my neighbours house once ... it was incredibly tasty and filling. I'm not sure I could make it myself though! I prefer my meat ready butchered [You must be registered and logged in to see this image.] |
