Bulgaria Introduces Standard for 'Real' Cheese

The Bulgarian state standard for white cheese has entered into force on Friday, the Bulgarian Institute for Standardization has announced.

The standard was developed by a group of experts. It will repeal the previous three standards for sheep, cow and mixed cheese.

It will apply to Bulgarian white cheese made from cow, sheep, buffalo, goal or mixed milk. There will be an addition of selected strain of microorganisms, isolated in Bulgaria, through curdling with rennet, which has received a required treatment and has undergone a process of maturation and is ready for consumption.

The standard's fundamental principles with regards to the components, quality indicators and characteristics, and technology will reflect the best practices of the cheese production.

Unlike the previous standards, the newly implemented one will include two new assortments, which are available on the Bulgarian market and are well-accepted abroad – buffalo white cheese and goat white cheese.

Like the other state standards for yogurt and meat, the Bulgarian state standard for cheese will also not be mandatory, but rather recommendable.

Every cheese producer will be able to buy the standard from the Bulgarian Institute for Standardization for the price of BGN 39,60.

I found some MATURE CHEDDAR at Kaufland Yambol yesterday. They only had a few chunks in and would easily have been missed if I had not been looking at something directly above it!!!

It has a black label WYKE FARMS Rich and creamy mature cheddar - have not tried it yet. Saving if for cheese on toast when my husband gets back home at the weekend!!

New Ordinance on Dairy Products Takes Effect in Bulgaria

An ordinance introducing specific requirements for dairy products enters into force in Bulgaria on December 31, 2012.

Under the new requirements, a company cannot produce both dairy products and the so-called imitation products containing vegetable fat, investor.bg reminds.

Dairy products and 'imitation dairy products containing milk' will be sold at separate stands in stores and will be easy to tell apart by their labels.

Bulgarian Agriculture Minister Miroslav Naydenov explained a few weeks ago that the ordinance was aimed at protecting consumers' interests.

He said that vegetable fat, especially palm oil, was harmful to people's health, and people had to be aware what they were consuming.

The ordinance stipulates the characteristics of dairy products like cheese, yellow cheese, yoghurt, ayran, curd products, etc.

A company will not be able to make both dairy and imitation products but will be able to switch from the one to the other type.

In the case of such decision, the company will be required to notify the Bulgarian Food Safety Agency within one day and will be allowed to change production plans once in six months.

The ordinance was supposed to take effect in October.

However, under requirements of the European Commission, the grace period was extended by the end of 2012.

Can't beat the sheeps chees my neighbour Djenka makes and supplies us with in copious amounts. She also bungs us cucumber, tomatoes to die for and garlic. if we are lucky she sometimes has some onions too. Pukka shopska is had every lunch time when we are at our house. It is even washed down with some of her husband Ivans cherry rakia which too is to die for. Sweet and lethal!
