Standards will be developed by the Expert Council for Food Safety at the National Veterinary Service in cooperation with the Association of Meat Processors in Bulgaria and leading technologists in meat processing. They will be mandatory for manufacturers, but the products produced by them will have certain protected names and logos. Standards, names and logo will be established by order of the Director General of the NVS. Control of production will be performed by the State animal health control. |

| comforting to know that standards will be achieved, i have over the last 3 years been amazed at the lack of standards in some restaurants and butchers shops that would make one reel in shock. and i have been very selective of what i have bought and cooked at home knowing this was the best thing to do, people hold different views of standards and up to now theirs is different to mine, but things are moving on and many offers of english foods are appearing all the time and making life easier, which makes a change from the annual pig culling where they celebrate the slow death of the animal. us brits are far removed from these practices and our standards are well in place, its such a shock when you see these traditions carry on, but bulgaria is still 50 years behind the uk and this simple life sometimes clashes with the modern day uk, we accept most of it but sometimes we cringe at their ways. but this is bulgaria not the uk. |

| Well said starlight and I fully understand what your saying, I think its all about what we as individuals find acceptable and yes we in the UK have moved on but in some ways not for the better although I do have to agree in Bulgaria the standards do need to be improved in certain places especially where it may effect your health and life, so all in all this can only be good but I wonder what standards they set? and if the standards will form part of the EU legislation? |

'Real' Meat Available in Bulgaria in August
Bulgaria's Agriculture Minister, Miroslav Naydenov, has announced that the Bulgarian state standard for nine meat products will enter into force August 1.
The minister said Monday that he is starting a “war against the garbage that is offered on our tables”.
After the implementation of the Bulgarian state standard (BDS) for yogurt, the country will also enjoy the BDS for some meat products.
“Starting August 1, if people use the words “minced meat” or “meatballs”, it should be only if they are follow the standard. If they do not, then they should not be called in this way,” Naydenov said, adding that soon there will be BDS for other meat products as well.
He has also stated that BDS for cheese and yellow cheese will be implemented from September 1 and expressed his hope that soon there will be a unified strategy for foods safety in the country.
“Strict control and draconian measures are the most important,” the minister said.
Naydenov has also assessed his first year of mandate and the work that his ministry has done in the past year.
He noted that he had a tough legacy but also pointed out that under his management, there have been an increase of provided EU subsidies, which in his words, were more than BGN 1 B for the past year.
At the same time, however, bio-agricultural producers were protesting in front of an empty shelf against the delayed EU subsidies. |

Standards are ready for meat products
Monday - August 2, shall enter into force nine standards for meat products approved by order of gerneralniya director of the National Veterinary Service Dr. Jordan Voinov. Their application is voluntary.
They relate to 21 products of pork, beef and poultry meat - minced meat, sausage, meatballs, raw sausage, karnacheta, frankfurters, sausage, smoked-cooked durable salami.
Products produced by these standards, labeled " Old Mountain" and will have a special distinctive logo. They will only be made from meat and will not contain preservatives and colorings. In addition, they will not allow use of soybean, potato starch, fiber, mechanically recovered meat, etc.. For comparison - as required BS standards existing in 1999, as frankfurters were allowed to use from 2.5% to 5% per 100 kg of soybean. meat.
The standards define the acceptable norm for salt content in minced meat, and kebapchetata meatballs, sausage and raw karnachetata is 2% of 100 kg. meat. And cooked boiled-smoked sausages must not contain more than 2.2 percent salt, and sustained boiled-smoked sausages of pork and beef - no more than 3.5 percent.
However, assuming the use of certain additives needed to produce strictly fixed quantity. It's acidity regulators - sugars, salts and vitamin C (sodium acetate and sodium citrate E262 E331, ascorbic acid and its salts Е300 - E301, E315, E316), phosphate (E450, E451, E452), nitrite salt (E249) . These additives are not permitted to minced meat, meatballs and kebapchetata.
The first sausage " Stara Planina" will appear on the market around September 15 as it is technologically necessary time for the start of production, said Dr. Jordan Voinov. But Ilonka Avramova, Vice-President of the Association of Meat Processors and manager of " Gala - M - Montana, stated that time is needed to develop the logo to print labels and technological samples.
Manufacturers predict that you will experience problems with the appearance of products (because of the ban on use of colors) and the expiry date, which will be reduced (because nevlaganeto preservatives). Surely the new sausage will be more expensive than some of the known so far are of the same species.
The next step is to require that products Stara Planina be arranged in individual stalls in the supply chain, explained by the NVS. |

The Return of Real Sausage
The taste of the sausage made of meat, which we cherish since our childhood revived. The name of the new delicatessen will be ‘Stara Planina’. Bulgaria's Agriculture Minister: Price of 'Real' Meat to Double
The Bulgarian Agriculture Minister has announced that the price of meat products, produced by the Bulgarian state standard, will be double.
“Minced meat, which is in proportion 60:40 pork to veal, will cost about BGN 8. Minced meat from pure meat cannot cost BGN 4,”the Minister Miroslav Naydenov said Sunday in an interview for the Bulgarian private TV channel Nova TV.
The Bulgarian state standard will soon be implemented for meat products like minced meat, grilled oblong rissole, meatball, sausage and some boiled and smoked meat products.
Producers who use the state standard will be able to put the name of the standard, “Stara Planina”, on the products' labels.
Naydenov has also stated that Bulgaria does not have enough laboratories for food control.
“We will try to impose an overall control and when there are doubts, the product willg o to a laboratory,” the minister said.
The state standard will not be mandatory but rather recommendable, just like the already implemented state standard for Bulgarian yogurt. |

Bulgaria Reveals Logo for 'Real' Meat Products
The Bulgarian National Veterinary Service has announced that the logo for the state standard for meat, “Stara Planina”, is ready.
“The logo consists of a green circle and mountain ridges in the colors of the Bulgarian flag,” the head of the Veterinary Service, Yordan Voynov, told the Bulgarian National Radio.
The logo is owned by the Association of Meat Processors in Bulgaria. They have announced that the state standard for meat could be used after paying the annual tax, which is BGN 120.
The products under the “Stara Planina” state standard should not include soybean, potato starch, fibers or mechanically recovered meat.
“There will be a constant presence of experts in the enterprises, at least in the beginning. They will be present at the time of the production, so that they can make sure that there are no violations,” said Diliyana Popova from the Association of Meat Processors in Bulgaria.
The Bulgarian state standard (BDS) was recently reintroduced after being abolished in 1998 with the argument that Bulgaria had to harmonize its regulations with those of the EU.
After the introduction of BDS for Bulgarian yogurt, now people will be able to enjoy “real” meat products.
The “Stara Planina” state standard includes the exact requirements for some meat products, like minced meat, grilled oblong rissole, meatball, sausage and some boiled and smoked meat products.
It is expected the products under the state standard to be more expensive than the others.

The licences of the four meat-producing companies, which have used soya in the production process of the products from the Stara Planina standard, will be removed immediately, as soya is an absolutely forbidden ingredient, according to the standard, Bulgarian Minister of Agriculture and Food Miroslav Naydenov announced at an extraordinary press conference. Minister Naydenov said that he had learned the news for the four samples, which tested positive for soya in the meat products, about an hour ago. Three of the companies, which used soya, are very big.
“All of the companies are members of the Bulgarian Meat Producers Association, as the manager of one of the companies is even in the Management Board of the association. Apart from taking their licences for the production of Stara Planina products, the companies will be placed under very serious complex inspections, which will cover the last few years. The National Revenue Agency will be informed, and it will conduct additional inspections to check for other irregularities in the past. The four samples of the meat products were tested twice and were taken from the commercial network,” Minister Naydenov explained. He added that he had thought that there would be producers, who would try to violate the requirements of the Stara Planina standard, sooner or later. Minister Naydenov concluded that the sanctions for the four companies will be an example for all other companies, producing products from the established standard. |
